Inspired by Japanese simplicity

We were given a task which felt more like an impossible riddle. The designers at Shun wanted placemats instead of tablecloths. They wanted rich, real wood and it had to be very thin and not warp or stain despite hot dishes and moisture and be washable and not mar the high shine on the black tables and look beautiful night after night. We did it, but we’re not telling how.

Now in service at Shun, Chef Alain Verzeroli’s new restaurant in NYC.
